The Ultra Processed Western Diet, the Gut Microbiome, and Dietary Xenobiotic Exposure in Crohn's Disease

Project Description

There is a need to develop a mechanistic understanding of how dietary therapies such as EEN are efficacious in the treatment of CD. This proposed study will investigate the regulation of beta-glucuronidases in the human gut microbiome by EEN, providing evidence for a previously unrecognized mechanism by which food chemistry may play a role in CD.
